If we had to choose one word for eggplants or baingan, it would be- ‘versatile’. There are so many ways to prepare them, and the final dish tastes delicious no matter what method you choose. What’s more? They don’t take a lot of time in cooking, so the preparations are ready before you break a sweat. Lucky for us, eggplants of different shapes, colours and sizes are always available in our nearest vegetable markets. However, the thick skin and sometimes a bitter flavour might make eggplant a problematic vegetable to cook for some people. Possibilities are unlimited with eggplants, them into fries or thick, thin, round slices or however you like. Coat them one by one in all-purpose flour, dip them in beaten eggs and then cover them in a mixture of grated parmesan cheese, breadcrumbs, mixed spices, salt and pepper. Then preheat the oven to 425 degrees F and bake for 15 minutes until golden brown and crispy. Serve steaming hot with a zesty, lemony dip!
Roasting eggplants is arguably the easiest and most delicious way to cook them. Just cover your eggplant in olive oil, pepper, salt and red chilli powder and roast in a hot oven or over an open flame to transform it into a smoky and delicious treat that is just bursting with flavours. You can eat it as it is, mash it up. Top the roasted eggplants with some lemon juice to enhance its flavours.
Mash Them (No, Not Baingan ka Bharta!)
Mashing eggplants into bharta is a popular way to prepare them. However, did you know that you can also make an eggplant dip? Simply slice the eggplants in half and cover them with oil, salt, black or red pepper powder and roast them until blackened around the edges. Take out the flesh and discard the skins. Strain it in a mesh and then blend in a food processor with garlic, lemon juice, olive oil, black pepper and salt. Serve with pita bread, nachos, fries etc.!
